Simple Basil Pesto

This is basic basil and pine nut pesto. Doesn't get any easier than this. Use this pesto on any pasta you like. Or mix with 8 oz of mascarpone for a basil- pine nut dip!

 

2 cups fresh basil leaves, packed


½ cup grated Parmesan cheese


â…“ cup pine nuts , toasted lightly


2–3 garlic cloves, peeled


½ cup olive oil


Salt, to taste



Add basil, Parmesan, pine nuts, and garlic to a food processor. Pulse a few times until coarsely chopped.


With the motor running, slowly stream in the olive oil until smooth.


Season with salt and a bit of lemon juice if desired.


Use right away or store in the fridge with a thin layer of oil on top to prevent browning.
