Gorgonzola Cream Sauce

Ingredients

2 tablespoons butter

2 cloves garlic, finely chopped


2 cups heavy cream


5–6 ounces Gorgonzola cheese, crumbled


¼ cup grated Parmesan cheese


Freshly ground black pepper, to taste



Method

  1. Sauté the garlic

    In a medium saucepan over medium-low heat, melt the butter. Add the garlic and cook gently until fragrant, about 30–60 seconds. Avoid browning.

  2. Reduce the cream

    Pour in the cream and bring to a gentle simmer. Stir occasionally and allow it to reduce until thickened and coats the back of a spoon, about 15–20 minutes.

  3. Add the cheese

    Remove the pan from the heat. Stir in the Gorgonzola and Parmesan until melted and smooth.

  4. Taste and finish

    Add freshly ground black pepper to taste. Note: The cheeses are naturally salty — taste before adding any additional salt.Serve immediately over fresh pasta, gnocchi, or vegetables.
